Jackfruit Curry

Ingredients
- 1 TBS vegetable oil
- 1 red onion diced
- 3 cloves garlic minced
- 1 tsp medium curry powder
- 1 tsp cumin ground
- 1 tsp chilly powder
- 1 tsp turmeric
- 1 tsp ground cinnamon
- 2 x 400 g tins jackfruit - drained and rinsed
- 2 x 400g tins coconut milk
- juice of one lime
- 1 TBS coconut sugar
- salt and pepper to taste.
Directions
- Step 1 Heat the oil in a pot and stir in the onion and garlic for about 5 mins until soft.
- Step 2 Stir in the spices and cook for an additional 1 min.
- Step 3 Add in the jackfruit , coconut milk , lime juice and coconut sugar.
- Step 4 Cook for 25 mins on a low heat – stirring occasionally.
- Step 5 Break down the softened jack fruit and stir well.
- Step 6 Serve immediately with rice and/ or naan bread.
